whipped garlic potatoes

large russet potatoes, peeled and diced
8 large garlic cloves, peeled
¼ cup (50 mL) whipping cream
2 tbsp. (25 mL) Western Family Butter
Salt and freshly ground white pepper
2 tbsp. (25 mL) finely chopped fresh chives, green onions, or parsley

Place potatoes and garlic in a saucepan and cover with water. Bring to
a boil. Reduce heat to medium and cook just until potatoes and garlic
are soft.

Heat cream and butter in a small saucepan or in the microwave. Place in
a mixing bowl.
Drain potatoes and garlic well. Add to cream and butter and whip with
an electric mixer until smooth. Season with salt and pepper to taste.
Sprinkle with chopped chives, green onions, or parsley and serve with
beef roast.
