grilled chicken caesar salad
4
x 6 oz (170g) boneless skinless chicken breasts
1 1 /2 cups (375 mL) Western Family Creamy Caesar Dressing (Regular
or Lite)
2 medium sized heads Romaine lettuce, removed of tough outer leaves
2 cups (500 mL) Western Family Croutons
1 /2 cup (125 mL) Western Family Creamy Caesar Dressing (Regular or
Lite)
4 tbsp (50 mL) Western Family Parmesan Cheese
In a self sealing
plastic bag place the chicken and 1 cup (250 mL) of Western Family
Creamy Caesar
Dressing. Seal the bag and shake to evenly coat the chicken. Refrigerate
and let marinate for 4 hours.
Pat
dry the romaine lettuce leaves. Tear into 2" (5 cm) pieces and place in a bowl. Cover with a moist paper towel
and refrigerate until needed.
Preheat
grill to medium high. Remove the chicken breasts from the Caesar dressing
(discarding the dressing) and
grill for 5 - 6 minutes per side, basting liberally with the 1 /2
cup (125 mL) of Western Family Creamy Caesar Dressing.
Remove
from grill
and set aside to cool slightly. In a bowl toss together the romaine
lettuce and croutons with a 1 /2 cup (125 mL) of Western Family Creamy
Caesar
Dressing. Arrange Caesar Salad on 4 plates.
Slice
each grilled chicken breast into 5 - 6 slices and place one chicken
breast on top
of each
salad. Garnish with grated Parmesan Cheese. Note: if you want,
you can even
add some bacon bits to the salad.
