western classics tortellini tuna salad
350g
package Western Classics tortellini (cheese or herb)
1/2 c (125 mL) each slivered red bell pepper and sliced red onion
1 can (175 g) Western Family tuna, drained
1/2 c (125 mL) chopped fresh parsley
1 c (250 mL) Western Family Frozen Peas
1/4 c (50 mL) chopped fresh basil (or 2 tsp (10 mL) dried)
Dressing:
1 clove garlic, minced
1 tsp (5 mL) Western Family Dijon Mustard
3 tbsp (45 mL) Western Classics Sauterne Cooking Wine
1/4 c (60 mL) Western Family orange juice
3 tbsp (45 mL) Western Family Canola Oil
1/4 c (60 mL) Western Family Plain Yogurt
Salt and freshly ground pepper

Cook tortellini in boiling water until al dente (tender but firm.) Rinse
in cold water. Drain thoroughly. Thaw peas under cold water.

In salad bowl, combine pasta, peas, bell pepper, onion, tuna, parsley
and basil: toss lightly to mix.

Dressing: In blender, combine all ingredients and mix. Pour over salad
and toss to mix.
Cover
and refrigerate for up to two days.
