sauerkraut salad
500
mL (2 c.) Western Family Wine Sauerkraut
3 green onions, chopped
1 green pepper, chopped
250 mL (1 c.) grated carrot
125 mL (1/2 c.) chopped celery
3 large red apples, unpeeled, cored and diced
2 mL (1/2 tsp.) salt
75 mL (1/3 c.) sugar
2 mL (1/2 tsp.) celery seed
75 mL (1/3 c.) Western Family White Vinegar
75 mL (1/3 c.) Western Family Canola Oil
125 mL (1/2 c.) pine nuts or walnuts (optional)
1.
Rinse and drain sauerkraut thoroughly.

In a glass bowl, mix sauerkraut and vegetables.

Combine salt, sugar, celery seed, vinegar and oil. Pour over sauerkraut
and vegetables.
4.
Cover and refrigerate 4 to 6 hours.
5.
Mix thoroughly and drain before serving. Sprinkle with nuts as desired.
6.
Serve with Western Family Ham or Sausages and Western Family
Frozen Green Beans.
