fresh vegetable platter with dilly dip
Use at least 6-8 different fresh vegetables of your choice. We suggest the following combination for an attractive platter.
250 mL carrots, cut into strips 1 cup
250 mL cauliflower florets 1 cup
250 mL broccoli florets 1 cup
250 mL snap or snow peas 1 cup
250 mL Western Family miniature canned corn 1 cup
250 mL small mushrooms 1 cup
250 mL cherry tomatoes or radishes 1 cup
the dip
250 mL Western Family plain yogurt 1 cup
125 mL Western Family light mayonnaise ½ cup
10 mL dried dill 2 tsp
10 mL dried minced onion flakes salt and pepper to taste 2 tsp
Choose a large serving platter. Wash and prepare all vegetables. Arrange attractively on platter. Cover with plastic wrap and store in refrigerator until ready to serve.
To make dip, combine all ingredients and blend well. Allow to sit in refrigerator for at least 1 hour for flavours to develop.
In a small bowl, combine mayonnaise and yogurt and stir together until evenly blended. Add curry paste to taste. Add to broccoli mixture and gently fold to evenly coat. Spoon into a serving bowl lined with leafy lettuce and serve immediately or cover and refrigerate for no more than two hours before serving or mixture may become slightly watery.
