roasted beets with western classics
ginger glaze sauce

large beets, about 1.5 kg (3 lbs)
2 medium sized cooking onions
284 mL tin Western Family Mandarin Oranges
125 to 175 mL (1/2 to 3/4 c.) Western Classics Ginger Glaze Sauce
50 mL (1/4 c.) chopped fresh coriander or Italian parsley
Western Family Canola Cooking Spray

Preheat oven to 375°F (190°C). Peel and trim beets and cut into bite-size
pieces. Peel onions and cut into wedges. Place in a large bowl. Drizzle
with Western Classics Ginger Glaze Sauce. Toss together until beets and
onions are evenly coated with sauce.

Coat a 9 x 13 inch (3.5 Litre) baking dish with cooking spray. Spoon beets
and onions into prepared pan in an even thickness. Spoon any excess Ginger
Sauce over top. Cover dish with foil.

Bake in centre of the preheated oven for 35 minutes or until beets are
tender when pierced with a fork. Stir beets occasionally to glaze.
4.
To serve, spoon into a serving bowl. Drain mandarin oranges and scatter
over top. Sprinkle with chopped coriander and serve immediately.
