pork, pea + walnut stir-fry
45 mL(3 tbsp) Thai sweet chili sauce
30 mL(2 tbsp) Hoisin sauce
30 mL(2 tbsp) Water
10 mL(2 tsp) Western Family lower sodium soy sauce
5 mL(1 tsp) Cornstarch
5 mL(1 tsp) Sesame oil
10 mL(2 tsp) Western Family canola oil
500 g(1 lb) Pork tenderloin, thinly sliced
1 Small red onion, cut into thin slices
2 Garlic cloves, minced
5 mL(1 tsp) Fresh ginger root, freshly grated
375 mL(11/2 cup) Sugar snap peas, trimmed
250 mL(1 cup) Green apple, unpeeled, thinly sliced
125 mL(1/2 cup) Walnuts halves, toasted
1. Combine first 6 ingredients in a small bowl. Set aside.
2. Heat a wok or large saucepan over medium-high heat. Add canola oil, pork, onion, garlic and ginger and stir-fry for about 3 minutes or until pork starts to brown.
3. Add peas, apple slices and chili sauce mixture. Stir-fry for 2 to 3 minutes or until peas are tender-crisp and pork is tender. Add walnuts and stir-fry for about 1 minute or until hot.
