polynesian turkey cutlets

4 turkey cutlets or steaks
1/2 cup (125 mL) Pineapple Juice
2 tbsp. (30 mL) brown sugar
2 tsp. (10 mL) Western Family White Vinegar
1 tsp. (5 mL) Western Classics Light Soya Sauce
2 tbsp. (30 mL) Western Classics Polynesian Cooking Sauce
1/4 tsp. (1.25 mL) cinnamon
1/2 tsp. (2.5 mL) cornstarch
1/2 chopped green pepper
3/4 cup (175 mL) Western Family Pineapple Chunks

1. In a shallow baking dish, mix pineapple juice, brown sugar, vinegar, soya sauce, cinnamon and Polynesian Sauce

2. Place turkey cutlets in sauce, coating both sides

3. Cover and refrigerate for 1 to 3 hours. Preheat oven to 350°F

4. Uncover and bake for 20 to 25 minutes, turning after 10 minutes

5. Pour pan juices into a saucepan. Add green pepper, pineapple and cornstarch. Cook on high, stirring constantly, until thickened

Pour over cutlets and serve immediately
