peanut butter pie
Crust:

1/4 cups (310 mL) Chocolate cookie crumbs (20 cookies)
1/4 cup (60 mL) sugar
1/4 cup (60 mL) Western Family butter, melted
Filling:
1
pkg (8 oz) cream cheese, softened
1 cup (250 mL) Western Family Smooth Peanut Butter
1/2 cup (125 mL) sugar
1 tbsp. (15 mL) butter, softened
1 tsp. (5 mL) vanilla
1 cup (250 mL) heavy cream, whipped
grated chocolate, or cookie crumbs

Preheat
oven to 375°F. Combine crust ingredients; press into springform pan.
Bake for 10 minutes. Cool.

In a mixing bowl, beat cream cheese, peanut butter, sugar, butter and
vanilla until smooth.

Fold in whipped cream. Gently spoon onto crust

Garnish with chocolate or cookie crumbs. Refrigerate until ready to
serve.

For
a lower fat alternative try using fat-free cream cheese and whipped
evaporated milk instead of heavy cream.
