old-fasioned cranberry scones

c. (750 mL) Western Family All-Purpose Flour, sifted
1/2 tsp. (3 mL) salt
4 tsp. (20 mL) Western Family baking powder
1/2 tsp. (3 mL) baking soda
1/2 c. (125 mL) sugar
1/4 c. (60 mL) cold butter
1 c. (250 mL) fresh/frozen cranberries*
10 tbsp. (150 mL) applesauce
1-175g tub 1-2% plain yogurt
Grated peel of 1 large orange
*Do
not thaw if using frozen cranberries.

Preheat oven to 425°F (220°C). Combine first 5 ingredients in a large
bowl; mix well.

Using a pastry blender or 2 knives, cut in butter to the size of peas.
Add cranberries; mix well.

In a small bowl, combine applesauce, yogurt and peel. Add to dry ingredients
bowl; mix gently, with your hands, making sure you leave the dough only
just combined - do not knead.
4.
Remove dough from bowl to a floured board. Divide in half. Use your hands
to gently pat each half into a circle about 8" (20 cm) in diameter.
5.
Cut each circle into 8 wedges. Place on a cookie sheet, making sure that
scones do not touch each other.
6.
Bake about 18-25 minutes or until browned. Cool on a rack.
