nacho scalloped potatoes

10 potatoes (Peel/if desired and sliced)
1 onion (sliced into rings)
3 tbsp. (45 mL) flour
3 tbsp. (45 mL) margarine
3 cups (750 mL) of milk
1 (39g) Old El Paso Nacho Cheese Seasoning Packet*
*Can substitute Cheez Whiz (approx. 1/3 to ½ cup) or shredded cheddar cheese.
5 cloves garlic (crushed)
salt and pepper to taste

1. Over medium heat make a paste with flour and margarine.

2. Add 2 cups of milk and stir until slightly thickened.

3. Mix nacho cheese packet with remaining cup of milk and add to white sauce.

4. Add crushed garlic to sauce.

5. Continue to stir over medium heat until entire mixture is slightly thickened.

6. Add salt and pepper to taste.

7. Pour cheese sauce to cover the bottom of prepared casserole dish.

8. Arrange half of potato slices and onion rings in a layer. Cover with cheese sauce.

9. Arrange another layer with remaining potatoes and onion slices. Cover with remaining sauce.

10. Preheat oven to 375°F. Cook covered for 30 minutes.

11. Uncover and cook for 60-70 minutes, until tender.

Makes 6 Servings

Serving Suggestion: Instead of using a nacho cheese packet you could substitute with Cheez Whiz (approx. 1/3 or 1/2 cup) or shredded cheddar cheese.
