halibut salad

(1 lb.) fresh halibut
125 mL (1/2 c.) Western Family Mayonnaise
1 large fresh lemon
15 mL (1 tbsp.) fresh dill, chopped

Poach halibut fillets in an electric frying pan that is half filled with
water and the juice of half of the lemon.

When fish flakes easily and is cooked through, drain thoroughly. Cut halibut
into bite-sized cubes.
3.
Combine Western Family Mayonnaise, lemon juice and dill in a bowl.
Gently fold in halibut.
Line a serving platter with curly lettuce leaves and spoon halibut salad
over top. Garnish with tomato wedges.
