fish and vegetable packets
4
fish fillets, about 4 oz. (100 g) each*
Salt and pepper to taste
2 Tbsp. (30 mL) Western Classics Orange juice
2 tsp. (10 mL) horseradish
2 Tbsp. (30 mL) chopped cooking onion
1 medium carrot, julienned
1 c. (250 mL) chopped assorted bell peppers
*We used
halibut fillets, but feel free to substitute almost any other type of
fish.
Preheat oven to 450ºF (230ºC). Prepare packets by cutting
four 12" (30 cm) squares of foil. Fold diagonally in half and open.
Place each fillet on one half of foil. Season with salt and pepper.
Mix orange juice and horseradish. Spoon over fillets. Add vegetables.
Bring edges of foil together to seal tightly. Place foil packets on
baking sheet and bake for 10-15 minutes or until fish is opaque and
flakes easily.
