easy seafood burgers

1 (170 g) tin Western Family Tuna or Salmon, drained
1/4 c. (60 mL) finely chopped celery
1 green onion, finely chopped
1/3 c. (75 mL) fine dry breadcrumbs
2 Tbsp. (30 mL) Western Family Sweet Relish
2 eggs, lightly beaten
Pepper to taste

In large mixing bowl, combine all ingredients. Shape into 4 patties. Heat a non-stick pan over medium-high heat and cook patties until both sides are golden brown - about 3 minutes per side.
Our Nutritionist's Comments:Serve on a whole-wheat bun with lettuce, a pickle slice and your choice of condiments. Slices of raw veggies are a perfect match on the side. For an elegant appetizer, make mini patties and serve on a leaf of lettuce accompanied by Western Family Tartar Sauce.
