classic chocolate coffee cheesecake

Western Family Chocolate Pie Crust
2 - 250g packages Western Family Cream Cheese
1 cup sugar
3 eggs
1 cup Western Family Pure Chocolate Chips
1/4 cup heavy cream
1 cup sour cream
1/2 cup brewed Western Family Ground Coffee
1 tbsp. cornstarch

Preheat oven to 350° F. In a large bowl, beat cream cheese and sugar at
medium speed until light and fluffy. Add eggs one at a time, beating well.

Melt chocolate chips over low heat. Add cream, stirring often.

On low speed, gradually add melted chocolate, sour cream, coffee and cornstarch
to cream cheese mixture.

Pour batter into pie crust. Bake 60-70 minutes or until outer edge is
firm and slightly puffed.
Cool
on rack for 4 hours. Cover and refrigerate for at least 12 hours. Garnish
with whipped cream.
Serve
this deliciously rich dessert with a "Health Wise" entree, such
as Fillet of Sole with Mushroom Sauce; it balances the total fat content
of the meal.
