Boneless
Prime Naturally*™ Chicken Thighs in Apple Raspberry Sauce
2 tbsp all-purpose flour 25 mL
2 tsp paprika 10 mL
2 tsp finely chopped parsley 10 mL
2 tsp finely chopped chervil (optional) 10 mL
½ tsp black pepper 2 mL
1 tbsp olive oil 15 mL
8 boneless, skinless Prime Naturally*™ chicken thighs
¾ cup chicken broth 175 mL
¾ cup dry white wine 175 mL
8 oz sliced button mushrooms, 250 g about 3 1/2 cups/875 mL
1 625 mL jar raspberry blend applesauce
In
a shallow bowl, stir flour with paprika, parsley, chervil and pepper.
Coat chicken in flour mixture, shaking off excess. Heat oil in a deep
large wide pan over medium-high heat. Cook until golden brown on both
sides, about 3 minutes a side. Remove from pan, place on a plate. Clean
pan.
Place
Prime Naturally*™ chicken
and any juice that may have accumulated back in clean pan along with
wine, broth and mushrooms. Turn chicken
to coat in liquid. Stir in raspberry applesauce. Bring to a boil, cover
and reduce heat to simmer, stirring occasionally for 30 minutes. Uncover,
increase heat and simmer until sauce is reduced slightly, about 15 more
minutes. Serve chicken over wide egg noodles with remaining sauce spooned
over top. Garnish with raspberries. Serves 4.
