sesame chicken drumettes with chipotle mayonnaise
75 mL toasted sesame seeds (1/3 cup)
30 mL fine dry bread crumbs (2 tbsp)
2 mL each salt, paprika and oregano (¼ tsp)
freshly ground black pepper
1 Western Family egg, beaten
8 chicken drummettes skin removed
Western Family cooking oil spray
the chipotle mayonnaise dip
1 tomato, chopped
30 mL Western Family low fat sour cream or plain yogurt(2 tbsp)
30 mL Western Family light mayonnaise (2 tbsp)
1 chipotle pepper in adobo sauce*
2 mL each ground cumin and salt (¼ tsp)
1. Preheat oven to 375°F (190°C).
2. Place a wire rack on a baking sheet lined with foil and lightly spray rack with cooking oil spray.
3. Combine sesame seeds, bread crumbs and seasonings in a wide shallow bowl. Stir to blend. Place egg in another bowl. Dip drummettes in egg and then in seed mixture to evenly coat. Place on prepared rack and lightly spray drummettes with a little cooking oil spray to encourage browning. Bake for 45 minutes. Increase temperature to 400°F (200°C) and bake another 5 minutes or until chicken is golden and juices run clear when pierced.
4. Meanwhile, combine Chipotle mayonnaise ingredients in a blender or food processor until blended. Serve as a dip for drummettes. Drummettes can be served hot or cold.
