cashew sprinkled brussels sprouts

1000 mL (4 cups) Western Family Frozen Brussels Sprouts
15 mL (1 tbsp.) Western Family Butter or Western Family Margarine
1 mL (1/4 tsp.) pepper
5 mL (1 tsp.) Western Family Lemon Juice
50 mL (1/4 cup) coarsely chopped salted cashews

1. Place Brussels sprouts in a steamer basket and place over boiling water. Cover and steam for 4 to 6 minutes or until tender. Drain water.

2. Return Brussels sprouts to pan, add butter or margarine, pepper and lemon juice.

3. Cook over medium heat until butter or margarine is melted. Sprinkle with cashew nuts and serve.

Makes 6 servings.

When shopping, choose Brussels sprouts that are small, green and have tightly packed leaves. This vegetable is an excellent source of vitamin C and it has high amounts of bioflavonoids, which are thought to protect against cancer.
