sandy's brown sugar shortbread cookies

lb. (250g) softened Western Family butter
13 tbsp. (195 mL) packed brown sugar
1 3/4 to 2 c. (425 to 500 mL) Western Family All-Purpose Flour
9 tbsp. (135 ml) ground almonds
1 c. (250 mL) chopped red & green glacé cherries

In a medium bowl, combine butter and sugar; using an electric mixer,
beat until fluffy.

Combine flour and ground almonds; stir into creamed mixture. Stir in
cherries.

Roll dough inside wax paper into a log of about 2" (5 cm) in diameter;
wrap tightly; chill for 4 hours.

Preheat oven to 300°F (150°C). Slice into 1/4" (0.6 cm) slices;
leave space between the slices on an un-greased cookie sheet; bake about
10 to 12 minutes.
