breakfast pizza


1 prepared pizza crust
5-10 slices fajita chicken breast
1 red or white onion (chopped or sliced)
1/2 cup (125 mL) (approx.) of Western Family barbecue sauce
3/4 cup (175 mL) sliced mushrooms (optional)
3/4 cup (175 mL) sliced red or yellow peppers (optional)
1 tsp. (5 mL) Western Family butter or margarine
4 to 5 large or extra large eggs
1 to 1 1/2 cups (250-375 mL) of Western Family grated mozzarella cheese
additional pizza toppings as desired

1. Preheat oven to 375 °F. Place the pizza crust on a pizza pan. Spread barbecue sauce on the crust (you can put on as little or as much as you desire).

2. In non-stick frying pan, place butter or margarine as well as onions, peppers, mushrooms, etc. (These ingredients can also be placed on the pizza without being cooked, but I find this tends to leave the pizza somewhat runny.) Sauté until vegetables begin to soften. Remove vegetables from pan.

3. Scramble eggs in same frying pan.

4. Place sliced or chopped meat (fajita chicken breast or other desired meat), vegetables and scrambled eggs on pizza in the order you desire.

5. Top with shredded cheese.

6. Bake in 375 °F oven for 30 to 35 minutes or until cheese starts to brown.
Secret: throw in any other vegetables left in your fridge. Makes a great breakfast or even serve later cold as a snack.

Serving Suggestion: Instead of using barbecue sauce, you could obviously use regular pizza sauce (although barbecue sauce gives it quite a unique flavor). I usually use a prepared pizza crust found in the deli section, but you could make your own pizza crust (if you get up early enough in the morning to make it!)

Story: I did not GET this recipe, I invented it. This makes a wonderfully filling breakfast and even a decent snack later when it is cold. The wonderful thing about this recipe is that you can create an abundance of variations - you are only limited by your imagination! Enjoy!

An alternative serving suggestion is to wrap the filling in a Western Family Tortilla Shell for a breakfast burrito.
