barbecued whole salmon
Ingredients:
1
whole salmon
1 lime
2 onions, sliced
2 ozs butter
salt & pepper
Directions:
Thoroughly
clean and wash the salmon.
Place
salmon on a double layer of heavy-duty aluminium foil. Stuff salmon with
the sliced onions, butter, salt and pepper.
Smear
butter on the outside of the salmon and squeeze the lime juice over.
Sprinkle
with more salt and pepper. Wrap the salmon tightly in the foil to make
it as "air-tight" as possible.
Place
on the medium heat BBQ for 20 - 25 minutes, then turn over and do the
other side for about 15 minutes.
