apple and pear chutney

45 mL white sugar 3 tbsp
30 mL freshly squeezed lemon juice 2 tbsp
250 mL Western Family apple juice 1 cup
3 granny smith apples, peeled and diced 3
3 ripe pears, peeled and diced 3
60 mL red onion, finely diced ¼ cup
1 cinnamon stick 1
15 mL pickled ginger, optional 1 tbsp

A delicious accompaniment to grilled pork chops.

1. Combine the sugar, lemon and apple juice in a pan and bring to a boil. Allow to simmer until the volume is reduced in half.

2. Add the apples, pears, onion, cinnamon stick and ginger. Simmer uncovered for about an hour or until most of the liquid has evaporated.

3. Serve warm with grilled pork.

Makes 4 servings.
