1 egg 3/4 c (175 mL) buttermilk
1/3 c (75 mL) Western Family canola oil
1 1/2 c (375 mL) Western Family all purpose flour
1 1/2 c (375 mL) coarsely grated carrots
1 1/2 c (375 mL) chopped raisins
1 1/4 c (310 mL) Western Classics Orange Almond Granola
1/2 c (125 mL) brown sugar
2 tsp (10 mL) grated lemon rind
1 tsp (5 mL) baking powder
1 tsp (5 mL) baking soda
1 1/2 tsp (7 mL) cinnamon
1/2 tsp (3 mL) nutmeg
1/2 tsp (3 mL) salt

Preheat oven to 350°F (180°C). In a medium bowl, whisk egg with buttermilk
and oil until blended.

In a large bowl stir remaining ingredients together until well mixed.
Stir buttermilk mixture into flour mixture until well combined.

Turn into a lightly greased 13 x 9 inch (32.5 x 22.5 cm) rectangular baking
pan, smoothing the top. Bake 15 - 18 minutes or until a toothpick inserted
in centre comes out clean. Cool and cut into squares. Store
refrigerated in an airtight container.
Makes
